Hold the cucumber next to the long side of a nori sheet, slice off the ends of the cucumber so it’s now the length of the nori sheet.
Quarter the cucumber lengthwise, creating 4 strips.
Stand each strip up vertically and use a sharp knife to slice off the watery/seedy center portion of the cucumber leaving only the crunchy edge. Discard the center.
Take each strip and slice it in half lengthwise, then slice each of those in half lengthwise again, creating 4 strips (16 strips total)
